THE ULTIMATE CHRISTMAS TREAT


Well the weather outside is...rather pleasant actually for this time of year. But instead of worry about our broken climate, it's way more fun to focus on the food, hands down my favorite thing about Christmas. This recipe is the ultimate in party food and so easy to do it's ridiculous. Uuuuuuuugly as sin but packed with flavor.

Devils on horseback ares so so de-li-cious you guys and only have 2 ingredients - 3 if you're feeling fancy like I was when I made these: prunes, streaky bacon, and brandy (very much optional). 



That's all you need.

The prunes melt in your mouth with their sweetness and the crispy streaky bacon adds a saltiness that cuts through the sweet and changes your world. For mine, I splurged on the bacon with this very Christmassy chestnut smoked variety bad boy. 


I don't think I've ever had a chestnut actually so the nuances of the chestnut smoke are wasted on me but I know from movies this is what's done at this time of year so...ya know.

STEP 1

Soak your prunes in brandy for at least 30 minutes.


I love what the brandy does to the flavour of the prunes and when cooked they really don't taste boozy at all. Just sweet but with more depth.


STEP 2

While they're soaking, preheat your oven to the max and line a baking tray with foil and a light smearing of oil.

STEP 3

Roll each prune in a strip of bacon. You may have to cut the bacon in half if you find that you are rolling the prune more than twice round.


Line them up ready for the heat.



STEP 4

Reduce your oven to 200 degrees celsius (390 Fahrenheit), get your devils in there for around 10-15 minutes depending on the strength of your oven. You want the bacon crispy and cooked through.

These are foolproof so why not give them ago this Christmas! Or any day for that matter. They don't stick around for very long...
